Bitters have a long history going back to the Egyptian empire where wine and vinegars were used to extract and preserve key nutrients for specific medicinal effect. Water, beer, cider, and tea flavoring were also common uses for bitters at that time. Most bitters, no matter what their extractive base, were best known as digestives.
